Meet our Executive Chef, Adam Parker. Adam brings his years of experience to our resort, already making an impact with awards in the local community and statewide for his Cuisine.
Adam’s personality shines through, not only in his cooking and kitchen creativity, but in his interactions in person and online. Chef Adam was selected to represent NH as a Celebrity Chef in 2012 for his contributions to food, health, and charitable organizations. Also featured in many local newspapers, magazines, and WMUR’s Cook’s Corner,

Recipes from Chef Adam
Holiday Cranberry and Spinach Fondue
Serves: 8 people
2oz per serving
- 2 ea Garlic cloves, minced fine
- 1 T Olive oil
- ½ cup Dry white wine
- 1 T Cornstarch
- 1 cup Heavy Cream
- 1 cup Parmesan cheese, shredded
- ½ cup Mozzarella, shredded
- ½ cup Cranberries
- ½ cup Spinach, rough chopped
- 2 ea Toasted Pita Bread (substitute Corn chips for a gluten free option)
Instructions- Lightly sauté garlic in oil for about a minute over medium heat. Add cream, In a separate bowl, mix wine and corn starch until no lumps are visible. Add to cream. Add parmesan and mozzarella, mixing over medium heat until melted and fully incorporated. Remove from heat and then add spinach and cranberries. Enjoy immediately or reheat in the microwave for the upcoming holiday party!
